Baffonero 2017

The Baffonero Rocca di Frassinello takes its name from the vineyard of the same name, whose south-westerly exposure to the sun makes it easier for it to be irradiated in the late afternoon hours. The summer ventilation from the north-west, especially during daylight hours, allows a delay in the ripening of the grapes. The temperature range between day and night gives the vine an adequate maintenance of organic acid levels in the mouth and a considerable increase in aromas. The soil from which Baffonero Rocca di Frassinello originates, thanks to good drainage and a clayey nature, allows the birth of sparse bunches with a high consistency in the berry tissues. The production process of Baffonero Maremma Toscana Doc involves harvesting in the first half of September, ageing in French oak barriques for 14 months and final resting in bottles for a period of 12 months. The glass of Rocca di Frassinello's house wine offers an intense ruby red colour with a fruity nose, rich with hints of forest fruits and vanilla. The notes that can be perceived are those of chocolate, tobacco and coffee, all surrounded by a prolonged and pleasant freshness.
